Summer Harvest Months

I’m so glad that we took the time, way back when in the winter and spring, to prepare our summer garden. Back in February, July seemed so far away, but away I went, starting seeds in our garage, all in hopes of sun-ripened summer veggies. And man, was it worth it, because these days I barely have time to water the garden, let alone make a trip to the grocery store. Going outside to pick vegetables straight from our yard is one of the highlights of my day. Although, definitely a small highlight in comparison to catching the little smiles that my baby boy is starting to surprise us with!

DSC_4899We went through a few weeks of having a ridiculous amount of green beans, and round two is on its way soon. These days, we’re enjoying long Japanese eggplant, basil, cherry tomatoes (sungolds, sweet 100s, and yellow pear), pimiento de padron peppers, and long soyu cucumbers.  I have my eye on this one pan farro dish to make with the tomatoes, and I’m also planning to make my new favorite pasta dish again soon!

And, the planner that I am is already thinking about when to start our fall/winter garden. If we actually get one in, it might be nothing short of a miracle.
