Watermelon Agua Fresca

DSC_7697One of my favorite things to do this summer has been to take the kids to a local farmer’s market on Thursday afternoons. I’m able to stock up on our weekly fruit and veggies, and Gianna and Caleb get to devour endless amounts of peaches, plums, nectarines, and strawberries. Caleb’s little hands and face are just covered in sticky juices by the end of it, but it’s worth it. Summer fruit is the best!

Agua FrescaIt was super hot one particular week and as we were strolling through the market, the agua frescas at a Mexican food truck called out to me. I split a strawberry one with a friend and it was sooooo good. What I love about agua frescas is that they’re light, not too sweet, and really refreshing on a hot day. I didn’t get through that much of mine before it was taken over by my dear Gianna, who gulped it down with the help of Caleb. Their little hands couldn’t grab it from each other soon enough.

DSC_7696I had it in my mind ever since to make a watermelon version myself. Give it a try!

Watermelon Agua Fresca, adapted from a Whole Foods recipe

8 cups cubed watermelon (mine were about 1 1/2 – 2 inch chunks)
1 cup cold water
squeeze of fresh lime
squeeze of honey
ice cubes to serve

Put watermelon and water into a blender, depending on your blender size, you might have to do half at a time. Process until blended, use a chopstick or spoon to push the fruit around if it gets stuck.

Strain the liquid. This part can take a while! There’s a surprising amount of pulp in the liquid. Just be patient, and use a spoon to push the liquid through, it speeds things up.

Add a squeeze of lime and honey to the strained liquid. (Side note: some recipes call for sugar instead, so do this if you want it sweeter). Add more of the lime and honey to your liking.

Serve in cups filled with ice.
